1.   Criollo- cocoaÀÇ ¿ÕÀÚ¶ó°íµµ ºÒ¸®´Â ÀÌ Á¾Àº, »©¾î³­ ¸À°ú ÇâÀ» °¡Áø °íÇ°Áú Ç°Á¾ ÀÔ´Ï´Ù.  Àü ¼¼°èÀÇ 15%¸¸ÀÌ ÀÌ criolloÁ¾ À̸ç, ÁÖ·Î Áß¾Ó ¾Æ¸Þ¸®Ä«¿Í Ä«¸®ºê ÇØ ÀÏ´ë¿¡¼­ Àç¹èµË´Ï´Ù.

2.   Forastero- Á¾·ùµµ ´Ù¾çÇÏ°í °íÇ°ÁúÀÎ ÀÌ Ç°Á¾Àº ¼¼°èÀûÀ¸·Î °¡Àå ¸¹Àº ºÐÆ÷¸¦ º¸ÀÔ´Ï´Ù. ÁÖ·Î, ºê¶óÁú°ú ¾ÆÇÁ¸®Ä«¿¡¼­ Àç¹èµÇ°í, ±× ¿­¸Å´Â criolloÁ¾ º¸´Ù ´Ü´ÜÇÏ¸ç »ý»ê¼ºÀÌ ³ô°í Àç¹è°¡ ¿ëÀÌÇÕ´Ï´Ù. ¶ÇÇÑ ÀÌ Á¾Àº °ÅÀÇ ¸ðµç ÃÊÄݸ´Á¦Ç°ÀÇ ¿ø·á·Î¼­ ²À »ç¿ëµË´Ï´Ù. CocoaÀÇ ¼¼ ¹ø° Á¾Àº TrinitarioÀε¥, Trinidad(¼­ÀεµÁ¦µµ¿¡ ÀÖ´Â ¼¶)¿¡¼­ ±â¿øÇÕ´Ï´Ù. ÀÌ Á¾Àº ´Ù¸¥ µÎ Á¾ÀÌ È¥ÇÕµÈ º¯Á¾ÀÔ´Ï´Ù. Forastero accounts for more than 90% of the world's usage. It is produced primarily in the West African countries of Ghana, Nigeria, Cameroon, and the Ivory Coast. Cridlo is produced in Venezuela and Central America as well as Papua New Guinea, Java, and Samoa. Trinitario is believed to be a hybrid of the other two varieties and is produced in Venezuela, Trinidad, Sri Lanka as well as other countries. It is used in the manufacture of certain high quality eating chocolates. Both the Criollo and Trinitario varieties are considered to have a better flavor than the Forastero. Thus criollo is blended with forastero to improve the flavor.
